February Meals

How was February for you?

I was really strict with trying a bunch of new recipes in January that my grocery bill doubled. For February, my aim was to try some new recipes but to also recreate some old ones and some loved recipes too, but my aim was to make them healthy, or at least to track them so I could get a concept of calories and correct portion sizes.

Breakfast

Chocolate Chip Pancakes

Since I’m calorie counting, and I had a craving for some pancakes from iHop, along with the fact that it was Pancake Tuesday, it seemed only fitting to recreate my own. So simple, yet so delicious. Aunt Jemima Pancake Mix, some chocolate chips to add in, served with bacon and that oh so delicious maple syrup.

Lunch

Tuna Salad Sandwich

Tuna Salad is one of my top favorite sandwiches. I usually mix tuna with some mayonnaise, sweet corn, red onion, and pepper. Since I’m trying to eat more salad, and more greens, I added some romaine lettuce to my sandwich. It gave it a nice addition, as well as providing some crunch to make the sandwich seem more filling.

Chicken & Cheese Quesadilla 

This was a recreation on Chopped Leaf’s Quesadilla. While it is delicious, I am watching my calories and my pennies so I wanted to recreate it myself. As well as having it at my own beck and call when I fancied it (as long as I have the ingredients). A simple concoction of a tortilla wrap, cooked chicken breast, and some shredded cheddar cheese. Popped in the pan for some grilling (I don’t have a panini press or such but this turned out really well). Served with some tzatziki on the side for dipping. Seriously, you should go ahead and try it. Simple and quick.

Chicken + Egg Caesar Salad

I’m really not a huge lover of salads, I go through phases, but the Caesar Salad has been creeping up on my food plan a lot lately. I made a slight alternative to it this time with some sliced up chicken, and a sliced boiled egg. Along with the usual romaine lettuce, bacon bits, dressing and parmesan cheese. Spinach is also a welcome addition to my caesar salad from time to time. 

Dinner

Spice Bag

If anyone has had a Spice Bag from the Chinese restaurant before, you’ll know what I mean when I say I miss these a lot. I’m not sure if they are a thing anywhere other than Ireland, but I sure do wish they would come to Canada. I got some Spice Bag seasoning mix from home, and they certainly helped to fill the void until I can get one cooked from the Chinese restaurant. Chicken goujons, fries, peppers, spring onion, onion, red chilli, some garlic and your Spice Bag seasoning and it’s a little piece of heaven. Served with some Curry Sauce and you’re all set.

Irish Coddle

I’ve heard it be referred to as a hug in a bowl. I think that’s pretty accurate, especially in the winter months. I’ve had this at home but never cooked it myself. I had to ask for the instructions from my parents and they even sent me video step by step instructions while they made one. Oxtail soup base, meat, vegetables, and potatoes… it’s so hearty and warm. I thought it was much more complicated to make, but it’s really not, and now that I’ve given it a chance to make I’ll be looking forward to making it again. Don’t forget your bread and butter on the side to soak up the last pieces of coddle in your bowl…. No drop gets left behind with this scrumptious dish.
