May Meals

My, oh, my, the recipes I tried this month were delicious. When I try to think which one was my favorite I second guess myself. They all turned out really well. 

I would like to retry the mozza sticks. I had some issues with the flour sticking to them once I dunked it in the egg, so I’d like to try to perfect this.

Without further adieu, here’s the new meals I cooked in May:

Bruschetta + Roast Chicken

I chopped up grape tomatoes, with some olive oil, crushed garlic and chopped up basil leaves. I bought a French loaf, sliced it in 1 inch slices and toasted them. Topped the toasted loaf slices with the bruschetta mixture, and served alongside roasted cooked chicken.

I’ve never had bruschetta before. I’m not a huge fan of tomatoes. I did enjoy this but next time I’d definitely cut the tomato up a little smaller.

Beef Stroganoff

This was truly drool worthy. I was extremely nervous about making this dish. The recipe was straight forward, but just the idea of the dish scared me. I couldn’t have been any more wrong. It was so simple, and quick to make.

Mozza Sticks + Chicken Kabobs

Mozza, mozza, mozza!!! Boy, oh, boy these broke me a little. A mozzarella block cheese, sliced into 1 inch sticks. Coat them with flour, then in to the egg/milk mix, then roll in breadcrumbs. Coating them in the egg after the flour was a little messy. The egg just wanted to roll off the four. I eventually for there. After the breadcrumbs, I popped the mozza sticks into the freezer for about an hour. Heated up some oil in a frying pan, removed the mozza sticks from the freezer, and fried until golden brown.

For the kabobs, chicken breasts into 1 inch cubes, red onion, yellow and red pepper, assembled onto skewers and coated in BBQ sauce. Best of all, these got cooked on the BBQ.

Both served up together with a side of marinara sauce for dipping the mozza sticks in.

Chicken Cordon Bleu Casserole

If you like chicken cordon bleu, then I highly suggest you try this. The recipe itself is just for the casserole itself with a suggestion for serving. I had some thick german noodles left from the stroganoff so I used those. I had some hesitations while cooking this dish but I had a very pleasant surprise when I taste tested near the end. I was excited to serve up this dish for dinner.

Chicken Wings with Caesar Salad

I don’t believe chicken wings need any further explanation, but I tried out something different with these. 

I coated them in some olive oil and Montreal chicken spice. Once they were cooked, I mixed some BBQ sauce and cayenne pepper in a large bowl, mixed it up, and then added in the cooked chicken wings to coat them. They turned out really well. I served them alongside a caesar salad.
